Yum! Yes we are glamping. Fortunately the cottage has an excellent wood stove. We have jugs of water. My husband had brought his guitar, I have my knitting and books to read. During the days we are exploring what these loggers are doing. Unfortunately it is not actually cold enough here for the loggers to finish the job. The next few days are very cold then it goes above freezing again. Lots and lots of mud!! They may have to pull the equipment and come back in January.
Stuffed cabbage leaves with ground beef, rice and tomato sauce. Hubby spotted some already made up at a deli and I realized we had all the ingredients at home.
Played with the instant pot today because it was freezing outside. I decided to toss a couple of frozen frying chickens into the pressure cooker and while they softened up I found a recipe for a italian style soup of spinach, whitebeans, diced tomatoes, sausage and chicken. So I got the chickens out and deboned them, filtered the broth, learned to saute' sausage instant pot style, with chopped garlic, and threw everything back into the pot and put it on slow cooker mode so it was ready for dinner. Cool kitchen toy given my ability to use many pots and pans making dinner.
Oh yes. Becky said it was one of the best things I have ever made. I used 1tbsp of pilliteri's seasoning and marinade powder and a local beef sausage cut in rounds instead of kielbasa. The diced tomato was canned, italian style. Annnndddd leftovers with grilled cheese sammiches
Book club meeting tonight. We call ourselves the Laughing ladies book club& it is a good description. We read Where the Crawdads Sing, set in the south on a swamp. The hostess is serving grits, blacked eyed peas & greens and I don't know what all else. I am bringing a watermelon-feta cheese-basil appetizer. Not totally on a southern swamp theme but at least the watermelon fits in.
Chicken piccata and Parmesan herb bread tonight, with a lettuce salad from the garden. I was out picking lettuce at 8 a.m. wearing a flannel shirt over my tee shirt. Ain't winter wonderful? No dessert--after pasta no one wants dessert.
I set rubbed steaks to dry in the fridge this morning. No idea bout the rest of it yet but here is a placeholder
Say Cayu--how did that feta-watermelon thing work out at your book do? Today we got our flu shots and ate in town. We shall just have a snack this evening...and some ice cream because I was a good boy and didn't cry at the doctors'. The doc looked at me in the office and said---"Why you aren't nervous about this are you Sjoerd". I told her that I would rather be stung fifteen times, one after the other by my bees than get one shot. She laughed haughtyly when I referred to her syringe and needle as an ice pick.
