What's everyone canning this year?

    With a huge surge in vegetable gardening this year due to the pandemic, I wondered if there would be a surge in food preservation this year as well.
    I'm planning to can several types of jam, peaches, apple sauce, relish, tomatoes, tomato sauce, salsa, beans, carrots, pickled beets and potatoes. I've already frozen asparagus and rhubarb, and will also be freezing black currents, raspberries, pumpkin, and squash. Looking for ideas! What's everyone 'putting up' this year?

    Mart, Netty has a big garden, a green thumb all the way to her elbow, and most of the canning jars in southern Ontario!
    I'm making refrigerator pickles for the first time. A recipe given to me by a lady who makes great refrigerator pickles, and she told me it was "no fail." We'll see . . . .

    Surely some jams too. Blackberries, loads hopefully. Will make plum and peach chutney again. Strawberry and raspberry jam too. Definitely tomato sauce and hopefully letcho and ratatouille. I will probably try lactofermenting courgettes too and making them like dill pickles.

    I am canning laughter so that as this wretched summer bears down on me I can open one every so often and forget the heat and drought.

    Another few weeks and fall pears will be ready ! Pear preserves are on my list ! If this arm cooperates and I can figure out how to peel them and not put a strain on it !

    I have a hand operated apple peeler. Works great for more than just apples ... I use it for potatoes and pears too!

    Jams, tomato's, leeks, bean sorts, broccoli, apple sauce, spinach, Swiss chard...I cannot think of the rest.
    It is all going pretty well at the moment, just all this rain! I just cannot be happy, right. Too much rain, too much sun, etc. hahaha.

    Sjoerd, you can spinach and chard? I have an abundance of kale, any idea of processing times?

    We do not have those in Texas ! Tried one variety of gooseberries but they do not like Texas heat !
