HaHa..Pudding made with Sponge..... https://en.wikipedia.org/wiki/Pudding My quick version for 4 servings equal amounts of flour butter or margarine and sugar two eggsadd 4 ozs of each for a large helping mix and blend sugar and fats together beat in 1 egg with little of the flour beat in 2nd egg with more flour to stop curdling add lemon juice approx 1 or less of a tablespoon include baking powder if plain general flour is used 1 tablespoon =15 ml put your syrup or jam in a microwave bowl add ingredients and smooth top cook in Microwave for approx 6 to 8 minutes until risen and looks dry on top Serve with Custard. Before the use of Microwaves this pudding would be put in a saucepan of boiling water and a basin wrapped in a pudding cloth, boiled for a long time and also you need to watch it does not boil dry....think it took well over an hour or more and cooking in the microwave works just as successful.
Must be like a sponge cake ! have never cooked it in a microwave ! Just 30 minutes in an oven ! Good with strawberries and whipped cream !
Today roast lamb with mint sauce and all the veg and gravy. Pudding is chocolate swiss roll, Angel delight and ice cream. Don't make many cakes, only the Christmas cake and Christmas puddings.
Logan, set an extra place at your table for me! I think we are going to have herb roasted salmon and a fresh green salad from the garden. Lunch will be a frittata to use up the leftover spaghetti carbonara with some Italian bread and dipping oil.
@Logan...ever done a lamb casserole with left over lamb..add onion sliced with carrots and a tin of tomatoes as need the tomato juice, but also a dark gravy as well so a oxo/stock cube and cornflower or gravy granules, season to taste, cook some potatoes and slice after, or slice first and cook careful..add to top of casserole dish..cook for an hour on medium heated oven or until potatoes are slightly browned. You can add any other veggie and serve on the side if you fancy...
@DianneWoollie no i haven't, but it sounds great. I portioned the rest up and put in freezer for the other Sundays.
