Tried this for the first time this evening and it is really, really good. 1/3 cup chopped onion 1/3 cup chopped celery 2 tablespoons butter or margerine 4 cups of diced peeled potatos 3 cups chicken broth 2 cups ( 8 oz. ) shredded cheddar cheese 2 cups milk 1/4 teaspoon pepper Dash paprika Seasoned croutons and minced fresh parsley In a large saucepan, saute onion and celery in butter until tender. Add potatos and broth; bring to a boil. Reduce heat and cover, then simmer for 10-15 minutes or until potatoes are tender. Puree in small batches until smooth and return to the pan. ( I just took a potato masher and squashed them, gives a thicker soup). Stir in the cheese, milk,pepper and paprika. Cook over low heat until cheese is melted. Garnish with croutons and parsely. Yeild: 8 servings. The next time I fix it, I am going to put some ham chunks in with it too!
I am not a big soup eater, but I just love this. We finished up the last of it last night for supper. The next time I make it, I am going to add some shredded summer squash that I have in the freezer. Should make it thicker and add a nice change of flavor.

Oh boy, I have potatoes, cheddar cheese, milk, chicken broth....and a cool front is moving across us dropping the temps down to more a seasonal level. Can't make this soup tonight but it will definitely be cooking tomorrow. Thanks for the recipe, we love cheddar potato soup.
Wow that does sound delicious, and easy too! I may make a BIG batch for the crew this winter. I work in a tire store and when the first snow flake flies we get slammed!! So I make something for all of us for lunch. It gets so busy that no one can leave so we eat here in shifts. I could put this in the crockpot and let them eat whenever they get a chance. They'd love it with biscuits Deanna :-D
Moving this up to the top for people. The only thing extra that I do is put a small can of shredded canned ham in it. Really makes it great. I also only half mash the potatoes. I like to have something to chew on in my soup!
OH, this is going to go over big at our next church supper! We have several "soup lovers" and they are going to dive face first into your cheddar potato soup. I'll follow your advice with the mashing half the potatoes and adding ham. Thank you for sharing the recipe (from all the replies you can tell this is a winner!).

Cap'n, It's supposed to turn cold early next week, so I picked up a few ingredients when I went to town yesterday and plan to make your soup Monday or Tuesday. I'll let you know how we like it, but judging from the recipe, we are going to love it!
Well, Cap'n, you asked us to tell you what we think of your cheddar soup. Yesterday was the second day of cold--had to bundle up and go to the barn every two hours to keep the chickens' water open; caught a cold; some pipes froze; and I fixed your soup for dinner. It was the best thing that happened all day! Gosh, is that stuff good! I put some chopped ham in it, and half-mashed the potatoes as you suggested. We each ate two bowls with some home-made French bread. Thank you for the recipe, and I'll always think of your cheddar soup when we need comfort food.
