The tubers of the sunchoke are somewhat potatolike, but sweeter. The carbohydrate present is inulin rather than starch. Some people think the flavor resembles that of artichokes, but I find the flavor of the tuber is its own. Once planted you will have a supply that self propagates. Sunchokes are a native of the Great Plains of the central part of North America.
The crisp sweet crunch of the raw cleaned and chopped tuber can be added to a mixed musclun salad with cranberries and goat cheese and a fruity vinegarette dressing. Yum. |
