I can't decide what color to paint the kitchen. The cupboards are medium birch, countertops are a brown tan color, vinyl flooring is a light brown beige, dining area is maple laminate, I have cathedral ceilings. I am not crazy about yellow. I like creams and off whites.

The walls in my kitchen are white, I have green and white 'ticking'striped wall paper with orange and red accent colors provided by towels, a window curtain and the screen door is a green almost matching the wall paper. You could start with an off-white on the walls, it is a good neutral for a kitchen if you don't like white. Add accessories...i.e. curtains, area rugs, towels, hotpads, canisters, decorative pieces, etc in whatever color you like. If at some future date you tire of that color, you can easily start changing the accessory colors without the trouble and expense of repainting walls. Also with off-white walls you can have as many colors you like in the kitchen. That would make for a very bright, cheery and personable place for family and friends to get together.
I would go with a pop of red on an accent wall. Browns and reds look very sharp together. Then you could add red cup towels, small rug, place mats to continue the color throughout the room. I would not go with a cream color or any light pastel. I think it would be too bland.
I agree with Toni - neutral colours on the walls and then inject colour with your accessories in your favourite shades. :-D
