lol,,,glad to hear that Bunkie,,,just remember it really is best after one year of aging. It will be like champagne with the fizzing and bubbling, so be careful taking the cork out. You can use the stop fermenting powders and that will make it more wine like. Good luck with your wine. And snow!! Ohh man. lol. I don't even have words for that,,, I did a little research on that type of cherry tree after i found out what it is from here. Its also like a choke cherry in taste but not as tart. When i found out, i called a Lakota friend of mine and he said that it also makes a pudding the Lokota eat called wanjapi (spelling?) its the cherries and grapes mashed and boiled down with a little water, then strained out or left in, sugar can be added, and a thickener if needed. He reminded me it was the pudding i ate while i was at his and his wifes home for dinner one night, and i can tell you it is so darn good. But what i was thinking i bet that combination would make an awesome wine too. Jr, (lakota man) used to be a neighbor of mine and taught me all kinds of little secrets about eating from the land.

I made grape wine years ago .I liked it and so did my mom but we didn't tell anyone as they considered it a sin to drink.
I love wine so much, I always bought them but never made it by myself because it will take a very long time to do. I can do only Sa-ke, it's local alcohol drink. ;-)
It's made from rice, also written as Sake. More along the beer brewing process than the wine making process.
Sa-ke Hi theway-farer thanks for mentioning Sa-ke. I've never drunk or made any but have now looked it up on the net. Looks a bit complicated compared to my wine making but guess like anything, easy when you know how.
Re: Sa-ke I have thai recipes for making sake both of thai and japanese formular, it's hard for translate but i'll post for share later.

Bird Cherry Flower wine :-? :-? I've got to tell you.. Bird Cherry Flower wine.... It's now cleared and stopped fermenting but tastes like your mother-in-laws sandals. Ooooo, I, its father, cant even drink it! Now I've got four gallons of the stuff, any ideas what to do with it? The toilet is probably the best idea as I don't dislike anybody that much to give it too.
