Here is one my favorite foods. I needed a delicious food without any wheat/gluten. I think i pretty much invented this. But don't be scared, its good! Let me know what you think. INGREDIENTS /2 cup vegetable oil 2 Tsp Stevia (or 1 Tsp stevia and 2 to 3 Tbsp brown sugar) 2 eggs, beaten 1/2 Tsp vanilla 1/2 Tsp cinnamon 3 to 4 Bananas, mushed 1 1/2 to 2 cups Quinoa flour 1 Tsp baking soda 1 Tsp cocoa powder (Optional) 1/4 Tsp salt DIRECTIONS Preheat oven 350 degrees Cook for 60 minutes, but check after first 30 minutes and cover with tin foil if it looks like the top might burn (it will if you don't cover it after 30 minutes) I really need some good gluten free foods. I especially would like to see some good amaranth/quinoa healthy foods. Please post them if ya got em!
