Rhubarb Bars

    Rhubarb Bars

    3c. diced rhubarb (you may substitute any fruit blend for this. I have made it with mixed frozen fruit in the winter, just add a little more cornstarch)
    1 1/2c. sugar
    1/4c. water
    4T. cornstarch
    mix together and cook until thickened. add 1t. vanilla.stir it in and set aside.
    in a separate bowl mix:
    1 1/2 c. oatmeal
    1c. brn sugar
    1c. soft butter
    1 1/2c flour
    1/2 t. baking soda
    1/2-1 c.chopped nuts if desired
    mix until crumbly set aside 1/4th if the mixture
    place remaining mixture in the bottom of a 9x13 pan. spread around and pat in gently.
    pour rhubarb sauce over this and sprinkle with remaining crumb mixture.
    Bake @ 375* for about 35min.

    My friend gave me a taste of this after she came for some rhubarb one day. I loved it. I hope you do too!

    Excuse me for asking, but I need to make certain. 1c is one cup? And 1t is one tablespoon or one tespoon? The degrees are F of course. I guess your cup is the American cup. The English cup's a bit larger.

    Droopy, 1c is 1cup and the american cup is 8 ounces/250ml
    1t is teaspoon, 1T is tablespoon
    The temperature is F, I don't know how your stove measures the heat but that converts to 190c

    Toni, thanks for clarifying this, I should have added the conversion measurements when I posted this. Sorry Droopy.

    This is excellent with strawberries added in.

    Nice recipe but I ate all my rhubarb. What other kind of fruit can be used? Just strawberries maybe? Farmer brown had strawberries out on the table this morning.

    Hi Jerry, I used a bag of frozen mixed fruit( I think raspberries, strawberries and blueberries) from aldi's for it last winter, It worked fine, I just added another tablespoon of cornstarch. Frozen fruit seems to make more liquid than fresh when you cook it..

    Thanks for the conversion Toni. :D The F/C conversion is the easiest to do, but I get very confused about cups, spoons and teaspoons. :D

    Don't worry Carolyn, we always get it sorted somehow.

    Yup these sounds delish! Reminds me of my grandma... she always makes rhubarb pies :)
