One of my dads friends posted on facebook that she was making a Persimmon Pudding for Thanksgiving, I can ask for the recipe if you like Edited to add: 2 cups Persimmon Pulp 3 Eggs 1 1/2 cups Flour 1 1/4 cups Sugar 1/2 teaspoon Salt 1 teaspoon Baking Powder 1 teaspoon Baking Soda 1/2 cup Melted Butter 2 1/2 cups Whole Milk 2 teaspoons cinnamon 1 teaspoon ginger 1/2 teaspoon nutmeg You could use buttermilk (I guess she means instead of seperate butter and milk?) 9x9 pan Oven at 325º about 60-80 minutes Serve with whipped cream
I did see a few recipes for pudding... but I'm a little scared to try it because the only pudding I ever made/eat was that jello pudding in a box that Bill Cosby endorsed. "Hey hey hey... I'm fat Albert!" Thanks Jen... I may have to give it a try. Goodness knows I have a lot to experiment with.
My favorite persimmon recipe My favorite persimmons recipe is “persimmons cookies”, it is seen as an old recipe but it still remains the best for me. Ingredients: 2 ripe persimmons, pureed 1 cup white sugar 1/2 cup butter 1 egg 2 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon ground cinnamon 1/2 teaspoon ground cloves 1/2 teaspoon ground nutmeg 1/2 teaspoon salt 1 cup chopped walnuts -Preheat oven to 375 degrees F (190 degrees C). Lightly grease or line one baking sheet with parchment paper. -Combine the flour, baking soda, cinnamon, cloves, nutmeg and salt. -Cream the butter or margarine with the sugar. Beat in the egg and persimmons. Add the flour mixture and mix until combined, stir in the chopped nuts. Drop by teaspoonfuls, 2 inches apart, onto the prepared baking sheet. -Bake at 375 degrees F (190 degrees C) for 12 to 15 minutes.
Thanks Melinda. I have all of the ingredients on hand... except for walnuts. Wonder if they would still be good with pecans instead? I did try a pie recipe I found online. Was not too impressed with it. The filling was too thin and it took forever to bake (should have been one hour and it took nearly two). But the flavor was good. Sort of a cross between pumpkin and apple pie. I froze several bags of the puree... so I'm going to give your cookies a try.
