My favorite is Roma tomatoes--meaty, small seed cavity, and ideal for making sauces. Second favorite is Celebrity--a heritage tomato that is prolific, and of the right size for canning. It's also great sliced fresh on sandwiches or for salads.

@marlingardener...I have yet to grow 'Celebrity' tomatoes. I may next year. I do plan on growing 'San Marzano' again next year...they didn't do well last year.

Do I have to pick just one??
    Canning tomato - Amish Paste
Cherry tomato - sweet millions (although this might change as I have several new varieties of cherry tomatoes in my garden this year)
Slicer - Paul Robeson - probably the best tasting tomato I have ever tried!
I am always trying new varieties looking for an even better tomato and I've already got Berkleys Tie Dye on my list for next year!

My current favourite is Ferline;however, I am trialing two new ones this year—“Crimson Crush” and “Mountain Magic”. They are only small marble-sized things at the moment...so time and weather will tell.

As for toms that I use for making concentrate to store in jars, I am growing Roma, Super Roma and San Marzano. I do not really have a favourite tom for concentrating, I just change from year to year based upon what I can get hold of.

Good idea Hummer, I especially liked the foto of the food.

Basically, celebrity. I think the flavor is my favorite but so too is the size. Its 1 serving. No tupperware after lunch or dinner for the uneaten extras.
