Can be fresh or frozen, but defrosted 8oz redcurrants 8oz white currants 8oz black currants 8oz pink currants 8oz gooseberries 10oz sugar or more if you like it sweeter 1oz of arrowroot for thickening dissolved in a bit of water to make it runny. Put all of the fruit and sugar in a pan bring it to the boil, let it boil for a few seconds then add the arrowroot mixture, keep stirring until it becomes thick, don't over do it or will lose the thickness. Pour into a bowl and let it cool. I use it as a topping to puddings, even on my porridge with all the fruit on top, then the compote. Great with ice cream
This looks Berry Delicious Logan. All of those currents and gooseberry - a labour of love for you. Well done!
Thank you @Anna Embry fruity,a bit on the sharp side but i like it like that, when hubby used to have it i put a bit more sugar in. Thank you Sjoerd, still got a lot of the fresh fruit to use up so we have some of it on our breakfast.
That looks delicious! My mom used to make a fruit compote, raspberries, peaches, plums. It was good over ice cream.
Thank you @Daniel W , yes i've used it over ice cream and i have it on my porridge with all the other fruit that I have.
