This is a difficult time for salads. One can only take so much cole slaw, macaroni salad, three bean salad. Lettuce, if available, is pretty sad. Husband came home with a large head of cauliflower and I put some of it into this salad: Cauliflower salad I head of cauliflower cut into bite size pieces and blanched for 1 minute in boiling water Red and green bell pepper Small red onion, sliced Two or three peperoncini, sliced and de-seeded Marinade Extra virgin olive oil, red wine vinegar, salt and freshly ground black pepper Method Drain cauliflower and mix in marinade, making sure all bits are covered.Mix in other vegetables and refrigerate for at least four hours. Longer marinating adds more flavor. Serve chilled. Goes well with beef, pork, chicken, and hot sandwiches.
Melody, we had it last night, and we really liked it. I wouldn't inflict a "not tried" recipe on my buddies here on the Stew!

I am a firm believer that we so often go ott with cooking. Remember the 'good old days'. Meat and two veg. Cabbage usually was boiled to threads...yuck. Most greens are good for you in moderation to begin with. Cauli florets are great raw, but the leaves will scour the guts out of you.
