There were extra eggs, so I scrambled a bunch. Then I made some shredded hash browns. I made egg and hash brown burritos - fried tortilla, a little egg, a little hash brown, some shredded cheese and taco sauce, all rolled up together as a burrito. I froze most of them and ate two. The frozen ones cook in about a minute in the microwave. They are much better than anything in the stores. When heated, the cheese melts into the hash browns and eggs. Even better.
Made a ragu. 3_1beef to italian sausage. A local liquor. leeks, shallots, mushvarooms, a canned anchovy and capers with a splash of rw vinegar. Herbs. Lets see if miss northeastern palate goes for it! As mister southern sweetness I am always amused about the people that like clams. edit: We have a winner! I think I will call that recipe "The Picky Bird" in a ironic salute. I am thinking of a separate husbands recipe box she need not know about to organize those recipes that she enjoys. Perhaps I will name it 'Rubenesque".
Funny thing, when I lived in Boise, ID I'd say I was from Washington but really can't stand clams. Everyone would be so surprised. I guess if you are born and raised in the Pacific Northwest you're automatically supposed to love those things. I never did understand their reasoning. I guess if you're from Idaho you must love, love, love potatoes of any kind or way. (Who doesn't like potatoes, though). We just had breakfast burritos.
Willow - you and Daniel have me eyeing these breakfast burritos. Homemade pizza tonight. This will also be travel lunch for a few days. I make GF crust for me and regular for Hubby. Ham, bacon, pineapple, mushroom, and onion with sauce from summer greenhouse tomatoes.
A few too many eggs again, so I also made two quiches. One is broccoli, the other is spinach and mushroom. I kept four slices and froze the rest.
