    @Daniel W - I have a family friend, and my Dad was, struggling with blood sugar levels. I used to try and do a lot of Stevia. Recently I've moved to Monk Fruit Sugar. What a difference in my baking and canning. If you can find it , it's definitely worthy of a try. No bitterness at all. Seems the same as sugar in taste tests. I use it in my tea and coffee. :)

    Thanks Mel. I'll give it a try.
    I've been using stevia somewhat. Especially, I found some breakfast cereals with no added sugar. That took a LOT of label reading and some dismay about all the sugar being foisted on us! (my curmudgeon opinion :confused:). The stevia helps the shredded wheat with fiber go down (sing to the tune from Mary Poppins, a Spoonful of Sugar Helps.... ):)

    For a quick addition for salad dressings, cereal's, drinks , mixed fruit desserts I use yogurt and no one even knows. :) . Don’t tell if they don’t ask.

    Blimey Mel, can’t you grow spuds there at all?! What a drama, meid. Have you tried growing them in commercial soil bags in a protected place?

    Roast turkey and stuffing with potatoes, cabbage, frozen broccoli, frozen peas and frozen sprouts with gravy. I get the frozen broccoli because the fresh isn't very fresh.
    Bread and butter pudding with ice cream.

    Sorry for the miscommunication Sjoerd. I grow potatoes :) I just can't eat potatoes. :) ( sad eyes).

    My sensitivity has diminished a bit. I can peel them now without getting hives or an asthma attack. I can mash them for hubby without getting a stuffy nose. When we used to peel potatoes for the high school Christmas Dinner I had to leave while the deed was done. And when I ate them ( last time was about 10 years ago) my eyes would puff up, my nose would stuff and I'd get an immediate sore throat and mouth. SO ...having said that....it's been ten years! hahaha sometimes allergies can calm down and things can be enjoyed in moderation. I may try some skin testing and wee steps to see if I can tolerate them again.

    what I wouldn't do for the taste of a new potato!! ( jealousy ensues at your wonderful dinner).:whistling::D

    @Melody Mc. so sorry about your allergy to potatoes. Yes perhaps you should try a test now that it's been so long.

    Tonites dinner: To hot to cook…hard boiled eggs cooked right inside my mailbox - ‘Redneck Version’ of an air fryer. Lots of fresh fruits and veggies. Avocados, green onions, pears, snap peas, strawberry’s, blueberry’s, 3 differnt kinds of lettuce, carrots, radish, kiwi , dressing yogurt mixed lemon and orange juice fresh squeezed.

    Tomorrow’s Dinner: It’s so hot outside I’m considering baking lasagne in my mailbox.

    Energy efficient! Sounds like a great idea!
    I've heard of people making dried fruit and sun dried tomatoes in their cars, too.

    We had cold noodles with cucumbers, cilantro, and a spicy peanut sauce.
