So far the most enjoyable dish of the week for me, would be the rice, peas, and beef with some cucumbers on the side. Let's see if another dish can change this by the end of the week.
I think mine has been home-made wraps filled with grated carrot, raw mushrooms, lettuce, chicken, cheesy coleslaw and mango chutney. :-D
Sounds absolutely wonderful. What type of raw mushrooms did you use by the way eileen, was it diced up or whole (providing they were small I guess)?
Barbecue chicken, chicken wings, shrimp, shish kabobs by my sister was the most enjoyable for the week.
Most enjoyable for the week thus far was shrimp curry with roti on Sunday. It was mouth watering good, and not too hot at all.
We marinated sliced mushrooms and onions together and grilled them. Then we took it and tossed it with hot pasta with black pepper and parmesan cheese. mmmmm.
I made seafood stew a couple of days ago & it was so good. It's my fave for the week. Used shrimp, scallops, lump crabmeat & New Zealand mussels ( I leave the mussels in the shells; it looks prettier in serving bowl.). Very simple: made a broth with the shrimp shells , some fresh basil, green onions, bit of Scotch Bonnet pepper, water & some adobo seasoning. ( you could omit the Scotch Bonnets if you don't like hot food. My hubby's Jamaican so he's gotta have the Scotch Bonnets!), black pepper, adobo seasoning ( I use Goya brand...the one with the blue cap) & a few fresh snow peas sprinkled in. I make broth first, with the shrimp shells,adobo seasoning, black pepper, and a piece of Scotch Bonnet pepper. Simmer for about 30 or 40 minutes, then strain.Put broth back into the pot after straining; add chopped basil, green onions and the snow peas. Simmer for about 7 or 8 minutes. Then add all the shellfish, cover & simmer gently just 'till seafood is cooked. You can sprinkle a bit of thin-sliced basil on top, if you like. Yummy!
