Are you bombarded with Zuchinni? Try this,, Fake Pineapple !

    4 qts more or less grated or diced zuchinni, seeds removed if needed.
    1 1/2 cups bottled lemon juice ( I reduced it to 1 cup)
    46 oz. can unsweetened pineapple juice ( I used sweetened so I reduced the sugar)
    3 cups sugar, ( I used 2 cups?)
    Simmer all for 20 minutes.
    Put into hot jars leaving 1/2 inch head space and process 30 minutes in water bath. Should be about same volume including juice as canned pineapple.
    I just let sit and cool in the pan and put in containers and put in freezer.
    Going to try this in a pie later this week.
    Strangely enough the zuchinni is a neutral flavor and takes on whatever you cook it with. Does taste like pineapple !!

    I suppose the zucchini won't mind. I wonder what else works, another fruit? Peaches perhaps?

    I am thinking apples, both will look the same if grated or diced. Going to put a brown sugar glaze on the fake pineapple pie.

    This might be a great use for those larger zucchini ... peeled and seeded it would almost LOOK like pineapple rings too! Wondering if this would fool the kids on pizza LOL

    I'm going to try this for sure. I'm diabetic and will substitute artificial sweetener and see how it turns out.

    If you substitute artificial sweetener,, freeze rather than can the fake pineapple !! Sugar is the preservative and since it is a non acid food, other than the pineapple juice, I would not trust the water bath for it !! So just freeze it to be on the safe side !! I have been a type 1 diabetic for over 30 years,, !!

    Thanks for the heads up about freezing. I've been a type 2 diabetic for over 25 years. One of the meds I'm on started to bother me and rather than going on a very expensive new med, that has many side affects, I decided to lose some extra weight...and it's working! That's a real incentive to loose!

    Excellent !! That is very important for type 2 diabetics . Growing and eating all these home grown vegetables should help with dropping a few pounds. Being a diabetic is one reason I have my garden,, I like to know what I put in my body. I am not a big meat eater and am perfectly happy with a pot of beans and cornbread or stir fried vegetables fresh picked or frozen from my garden. I have reduced the sugar and learned to bake with sweet and low , so I really do not miss the sugar.
    I just take insulin so really that is much simpler than the oral meds. Doctor tried me on one oral and it didn`t work for me . Made me feel like crap.

    I tried this recipe Mart, thanks! I found it too sweet, so next time I will decrease the amount of sugar. It DOES taste just like pineapple, the only give away is the texture. A good idea for using up that extra zucchini from the garden.

    I reduce the sugar in mine too. Its great for zucchini bread in the winter. Gives it a little different flavor but still good ! I may try this same thing with apple juice and cinnamon.
