Aussie Chicken

    This experiment into the world of low sugar/carbohydrate/calorie is a new one but since my DR. said loose weight and my wife was diagnosed as pre diabetic I went hunting for things to cook/modify etc. etc.

    I called it Aussie chicken because I stole the idea from an Australian diabetic website. As long as they don't want it back I guess the diet police won't be after me.

    A caveat before we start is that I hardly measure anything. Look, feel, taste, keeping the smoke alarm quite is my guideline. Remember all the ingredients have to fit into something that will go into an oven for a half hour. Did I mention the wine yet? Go get a glass of wine….I'll wait…….Got it? ………O.K. now we can start…

    What you need

    1 or 1.5 sweet potato(s)

    1 or 2 Tomatoes cut up quarters or eighths

    10/12 scallions cut into small pieces

    6 cloves of garlic cut into slivers

    1 glass of wine(maybe two)

    olive oil (as needed)

    italian seasoned breadcrumbs

    1/2 can chickpeas (already bite size)

    a couple of chicken breasts (also cut into manageable pieces)


    Hardware list:

    Big bowl(for mixing veggies and oil and chicken)

    Bowl for breadcrumbs

    A respectable cast iron frying pan

    spatula or some tongs (for turning chicken)

    Knife for cutting garlic and chicken

    A baking dish that everything can fit into



    I will also use one of those abbreviations people that text are so fond of using and for which I have a lookup file to keep my sanity.

    IMHO the first ingredient should, when you bite into it, be soft. (I put them in the microwave for 1.5 minutes.)

    Fire up the oven to 425°F, 220°C(close enough)

    1 sweet potato- cut into bite size pieces. Hungry? use 1.5 potatoes (sip wine here)

    1/2 red onion cut into the size you would put into your mouth (more wine)

    Cut the one or two tomatoes into 1/8 size wedges

    Cut up the scallions (sip wine)

    Take the tunic off the 6 cloves slice into slivers

    Combine everything into a bowl mix with olive oil (pour till you are happy, by this time the veggies know they are in for it)

    Put the oiled veggies in a baking dish, put in oven for 15 minutes, don't get rid of the oil in the bowl

    Sip wine

    Put italian seasoned bread crumbs in the other bowl

    Cut up the chicken put into the bowl with the olive oil, mix with olive oil

    coat chicken with breadcrumbs

    On stovetop put olive oil in a respectable iron frying pan turn on heat

    Brown the breaded chicken on both sides (sip wine)

    when the 15 minutes are up remove veggies from oven, mix in browned chicken pieces

    Sprinkle combined mixture with any remaining breadcrumbs, if you have a lot it looks like this

    Return to oven for another 5 minutes

    After 5 minutes sprinkle in the chickpeas

    return to oven for 10 minutes (finish wine)

    When the dish is done serve. pour another glass of wine. eat, drink, be merry.

    That looks so good. How many glasses of wine does it take to make this dish?

    Looks delicious Jerry. My husband & I have been looking for low carb recipes because I am pre-diabetic too. I'll show him this one. The photos are great. Lots of vegies.

    Sounds good! I'll make it, but only when our wine supply is plentiful. I love cooking with wine, and occasionally add some to a dish.

    Hope you find a lot of recipes that are healthy and tasty.

    For my family that meal would be pared down to a baked sweet potato and braised chicken breast with a green veggie on the side...maybe. Between food alergies and 'just don't like the taste' my cooking has to be fairly simple. ;)

    We do like some of the Atkins recipes, they are higher in protein than most diets.
