Baked Squash

    I am trying to get my families veggie choices expanded to include more than potatoes, rice, corn and peas. So last night I tried this with Crookneck Summer Squash and we all enjoyed it very much.
    Any kind of yellow summer squash should work.

    4-5 squash sliced lengthwise, after cutting off the neck.
    1/2 cup beef broth (chicken would work too if you prefer) You could also use any homemade stock that you have on hand.

    Pour broth in a baking dish and lay the slices in the dish. Salt and pepper to taste, I used Lemon Pepper and that added a nice extra flavor.
    Bake covered at 375 degrees until tender, then uncover for a few minutes to brown the tops.

    Sprinkle grated cheddar cheese or cheese of your choice over top and let it melt.

    I'm not a big fan of squash but that does sound good. I may give it a try.

    Oh, that does sound good! We have lots of squash, both fresh and frozen, so I'll try your recipe.
    When she was little my niece would only eat corn--no other vegetable. Drove me nuts!
