Banana-Filled French Toast

    Banana-Filled French Toast
    You won't believe how wonderful this low-fat breakfast is!






    Ingredients
    Sauce:
    1/2 cup nonfat yogurt
    3 Tablespoons HONEY
    Mix together. Set aside.

    Filling:
    2 bananas, peeled
    4 teaspoons frozen orange juice concentrate
    1 teaspoon GOLDEN BLOSSOM HONEY
    8 slices raisin bread
    4 large egg whites
    1/2 cup skim milk
    2 teaspoons butter or margarine
    fresh strawberries


    Directions
    In a small bowl mash bananas with a fork. Stir in orange juice concentrate and honey. Spread banana mixture over 4 slices of bread and top with remaining slices, forming 4 sandwiches.

    Whisk together egg whites and milk and pour into a shallow dish. Soak sandwiches on each side for 20 seconds. Transfer to a plate.

    Melt 1 teaspoon butter in a nonstick skillet over medium heat. Cook sandwiches until underside is browned, about 5-7 minutes. Lift and add remaining butter. Turn sandwiches and cook for another 5-7 minutes, or until browned.

    To serve, cut into quarters. Arrange on serving plate with small bowl of sauce in center. Garnish with fresh strawberries.

    Serves: 4
