Beet greens galore!

    Today a friend called me while I was at the library. He said to come out to his house after we finished and we could have some beet greens. dr's favorite vegetable is beet greens. Use them any way that you use spinach or swiss chard or kale. He gave us seven large bags of them. Soon, I will soak them in some cold water and drain them. I'll cut them off of the stalks, chop them and freeze them for use later on. Tomorrow he said come back and we can have as many more as we want to have. He has a large garden full of them. They just can the beets and toss away the greens. He says I can have some green beans and zucchini, too. He runs the local farm market which he says will open the first weekend in May. I need to get my apron boxes out and give them a good shake and maybe a press. I, also, want to make some more children's aprons and a few more farm aprons.

    And I'm waiting to get beets in the ground. We're due for 1-2" more on top of the 5 1/4" or so we got Tuesday. Just an excuse I suppose to scout for turkey hunting and drinking beer! 8)

    He planted these beets back in November. Here you can grow something almost all year around. dooley
