We have all the eggplant and other veggies in the freezer we can use this winter and people who live around us do not care for eggplant. The result was, I have neglected the garden. When mowing the grass today I noticed something that looked like an eggplant. Upon inspection, there were three huge eggplants. Is there any use for eggplant this big? wow! those are mammoth eggplant. I would think they would still be edible, but the one that has lost it's beautiful color may be a little on the tough side.
I see lots of moussaka being made in your house soon. We'll all come along and sample it for you if you like.
Chop them in reasonably sized slices, toss in a well oiled pan, fry and add crushed pepper, diced onions and chillies 2 minutes before you turn off the stove. Finally, gimme a call!
