Boneless Chicken Thighs in Skillet (1 hour 10 minutes)

    I put together a new recipe using economical boneless chicken thighs. It would probably work just as well with bone-in thighs.

    5 - 8 Chicken Thighs
    28 oz can plum tomatoes
    8 oz sauce
    1 can cream of mushroom soup
    A pinch of all these herbs and spices:
    salt
    pepper
    garlic powder
    onion powder
    italian spices (A little more of these is good)
    small pinch of sugar

    1 - 2 tsp oil in large skillet. Brown the thighs 3-4 minutes on each side.

    Take out and drain on towels. Drain any leftover oil out of the pan.

    Dump tomatoes and liquid into large bowl. Cut tomatoes into small pieces with two sharp knives. Add sauce and soup. Add spices. Whisk together until smooth. Pour half into skillet, add chicken pieces. Pour remaining sauce over all. Bring to a boil, immediately lower heat and simmer for 1 hour. Serve over rice or noodles. DELICIOUS!!!

    Tonight we sprinkled some leftover shredded cheese on top. It was a nice addition.

    That sounds like a sauce that would be tasty with or without the chicken! On pasta or spaghetti squash, yum!

    It sure does DaisyBeans.I love spagetti squash with the seeds out and butter in the middle and salt and pepper microwave on hi until tender app 15 to 20 mins.of until fork goes in easy.

    Now I hae never fixed a spag squash like that Glenda. Sounds easy. butter makes veggies sooo good, doesn't it?

    I always cut in half, remove the seeds first and bake upside down in a shallow pan of water and then when it's tender, I scrape out the middle with a fork so it is all stringy and top it with some sauce of some kind.

    I did my chicken today in a dutch oven on top of the stove.

    Water
    chicken
    celery
    carrots
    onions
    potatoes
    noodles
    rice
    salt
    pepper
    parsley
    an bouillon cubes.
    Let it all simmer away about 2 hrs an you got the finest chicken supper you ever ate.
    farmer style.

    I have lots left, come on up an eat.
    I also made some rye dinner rolls , an brownies, and sand cookies to go.

    Felt like a good day to cook. Kept me warm.LOL

    I love those boneless skinless chicken thighs!!

    I know can make some of those yummy recipes that call for "breast meat"

    I only eat thighs and wings and the thighs are a perfect substitute for the white meat!!

    :D Bsewnsew, your recipe sounds yummy too. (As my grandson would say) Bluewolf, I love the boneless thighs because they stay moister and the flavor is better.

    slice , dip in milk then flour an fry till golden.
    Oh we love it .

    No other kind suits us stubborn Pollocks /Irish too.
