Canning this year's produce

    See, This is what I did today. That's 144 corn on the cob scrunched down to 50 pints. Soon I will get more and blanch about 2 gallons and freeze it so I have both frozen and canned.

    whats your brine mixture for it barb? as i hope to can some this year as well

    Barb, you must be up all night to get that much canning done! And it's pretty, too.
    So, when are you inviting the entire Stew community over to your house for dinner? We could probably put a dent in your canned goods!

    Oh yes, I am sure we could all have some fun in my pantry. There is a little bit of everything there. Carrots, corn, corned beef, lots of turkey and chicken broth, pickled beets, sweet potatoes and regular potatoes, chicken, chili with meat, salsa, whole tomatoes and plain flavored tomato sauces, meat balls, peach and pear, and apple pie filling, all kinds of hot peppers, and even pickled brussel sprouts and the pickled asparagus is all gone.

    That last batch of corn I did only took the daytime. I have to pressure canners that take 18 pint jars in each. So that's 36 pints at a time. I only canned 50 yesterday. Not really a big job. Now, we can have 1 pint of corn every week for a year. LOL, unless all of you come over and raid my pantry.

    This morning I finished up with taking the rings off and washing each jar very well and labeling the jar and placing them on the shelf. I only have to label the actual shelf next but my p-touch stopped working. All this is very important to me to get done.

    Danjensen, I don't understand your question. I use brine, salt and water mixture for pickles. I don't use that for corn, unless I am pickling it. I try not to use salt when canning, like, I use lemon in tomato sauce instead of salt. So, in my corn I only use a sprinkle of sugar and boiling water. Processing it, pressure canner method, for 55 minutes.

    Gosh Barb what a well stocked pantry you have. Your family will never go hungry with you around that's for sure. :-D

    I am having trouble getting to them but tomorrow I will be doing beets and lil potatoes. Just haven't had the time to go get them out of the garden. Beets are getting very large.

    wow, I am inspired, I am buying my first pressure cooker for canning this week and bought the Blue ball book, I want a pantry just like yours!

    Darn you Barb! I showed DH your pictures and now he wants me to buy the bigger, more expensive pressure cooker and is already anticipating a full pantry this winter! He has even offered to drive me to the farmer's markets for massive quantities of produce! I share part of the blame for addicting him to my spicy tomato sauce! LOL

    Barb, what do you use to remove the kernels for canning your corn? I have seen many gadgets, any opinions? (as you can see, you are now officially my canning goddess) Some seem to be better purposed to make creamed corn...
