celeriac

    I was adventurous when i went to the store the other day i bought some fresh veg i hadnt had before I bought a spaghetti squash and a celeriac, I decided to make roast lamb last night so we went for the celeriac I boiled it till it was soft then mashed it with butter salt and pepper it was so good, now comes the dumb question what is celeriac? is it a root of celery or a different plant it looked like it had had large stalks cut off and tasted like a mild celery, I have never seen celeriac or celery grown so I am clueless, either way it tasted good.

    Celeriac is a relative of celery but is grown for the root instead of the stems like celery. You can do with it pretty much the same thing that you do with potatoes, bake, mash, peel and boil, and use it in soups, stews, etc. Half the calories of potatoes.

    One of the best things about it is that it has such a low gylcemic-index that it is a great option for diabetics.
