I need some ideas of something to go with a breakfast/brunch casserole. It has sausage and eggs in it. Can't remember what else. Probably something kinda' sweet...and I can't rely on finding good fruit that time of the year. We will have juice and coffee with Bailey's. Suggestions please...
Don't know if you are a bread baker but I have a recipe for a 'to die for' cinnamon swirl bread. We have it every christmas morning with a sausage/egg dish.
No, I am not, but I would like the recipe. My daughter is the baker in the family, and the cinnamon swirl sounds yummy.
Peel some apples & cook them a little while, not long enough that they all mush but so they are soft and some liquid comes out. Add a little brown sugar, maybe some butter, and a good shake of cinnamon. I make that some mornings during apple season and it goes really well with things like brunch casseroles.
Hey Kuntrygal, The recipe I use the most for holiday brunches isn't sweet but it is always a big hit and easy to make. You can even bake the "shell" the night before, fill it with everything, cover it with plastic wrap and store it in the fridge. Just let it sit out for a 1/2 hour before you uncover it and pop it in the oven in the morning. Hash Brown Casserole 3 cups of frozen, loose packed shredded hash browns, thawed. (pop it in the microwave for 3 minutes or let it sit out until it thaws) 1/3 cup melted butter or margarine 1 cup shredded cheddar cheese (or any cheese you like) 1/2 cup diced green pepper 1/2 cup diced shallots or onion 1 cup of cooked diced cooked ham, crumbled sausage or bacon or a mix of all three (can omit this if you are a vegetarian) 4 eggs 1 cup of milk salt and pepper to taste (I use about 1/2 tsp of each) Press hash browns between a towel to remove excess moisture. Press into the bottom and up the sides of an ungreased pie pan. (I prefer glass so I can see if the hashbrowns are brown enough for me) Drizzle melted butter or margarine over all of it. Bake at 425 F for 25 minutes or until the "shell" is browned slightly. Combine the peppers, onions, meat if you are using it and cheese in a bowl, spoon into the hash brown crust. Beat the eggs, salt and pepper and pour over all. Either refrigerate at this point or reduce the heat to 350 F and bake for 25-35 minutes. Check with a knife in the center. If it comes out clean, it is done baking. Let stand for a few minutes, then slice. This reheats very well. You can also play around with what veggies to include- just make sure you have 1 cup total.
