Coconut-Walnut Bread

    This easy make bread is not only yummy, but has Omega 3 Fatty acids, via the addition of walnuts and canola oil. This recipe is cut in half, as there are only the two of us, but it rises enough to use a standard loaf pan. If you double it, it will come up over the top like a normal sized loaf. I hope you like my Mom's recipe as much as I do. ;)

    Ingredients:
    *1 cup sugar
    *1/2 cup canola oil
    *2 extra large eggs
    *1 tsp coconut extract
    *1 1/2 cup bread flour (or reg flour with 1/2 tbsp. wheat gluten added)
    *1/4 tsp Baking soda
    1/4 tsp Baking powder
    *1/4 tsp fine salt
    *1/2 cup milk or Silk Almond milk
    *3/4 cup flaked coconut
    *1/2 cup diced English walnuts

    *Aluminum foil
    *Standard loaf pan
    *Butter
    *Paper towel
    *Mixer

    Heat Oven to 375 degrees F. Place a small bit of real butter on paper towel, and smear into standard sized loaf pan to coat sides and bottom. Dust with flour and shake out excess. Place the prepared pan in refrigerator while you make the batter.
    In mixing bowl, beat the sugar and oil well. Turn down speed and add the eggs and coconut extract. With speed on lowest setting, add flour, baking powder, soda and salt. Slowly pour in milk. Return speed to medium and make sure well incorporated. turn back down to low speed and add the coconut and walnuts. Mix until evenly distributed into batter.
    Remove chilled loaf pan from fridge and pour all batter into it. Cover loosely with aluminum foil. Bake for 40 to 45 minutes before opening oven to check on loaf. At this time remove the foil and cook another 10 to 15 minutes. Check for doneness with toothpick insertion.
    *I like a fresh slice with butter...MMMMMMM!

    I was wondering the same thing as Palustris about Canola oil and coconut extract. Do you think there are any alternatives that we Brits could use instead of these ingredients?

    Hi Eileen,
    I was thinking Palustris may be from out of the states. I would not use olive oil, it would ruin the taste. I would think that real butter could be used instead of the canola oil, and instead of extract of coconut, oil of coconut.

    I'm sure it would taste just as delicious with those substitutes.
    Edit: Melt butter before adding to recipe!
    Edit Edit: do you have anything in the motherland called 'Essence of Coconut?' That would be even better.

    Amazon sell various Coconut extracts. Canola oil is very similar to Rapeseed oil as far as I can see.
