I'm making a Jumble Pie..... no great secret; you just use a combo. of raspberries, strawberries, blackberries & blueberries, in a double-crust, butter-pastry shell. Also making a Pakistani dessert ( as my hubby was Pakistani, kids are 1/2; so we try to keep some of the food & culture going). It's actually a combo of two desserts. First is an ice-cream with pistachios called Kulfi that's frozen in little cone-shaped containers. The other dessert is called Falooda. Traditionally it is served in a glass & is comprised of ice-cream, clotted cream, tranparent noodles I make from cornstarch, a little black seed called Tukmeria (which when soaked looks like frogs'eyes!), crushed ice & rose syrup. Instead i'm just making the noodles & rose syrup & will put a small mound of noodles on plate with the Kulfi & drizzle a little of rose syrup over the noodles. Delicious! What is everyone else making for Easter dessert?
Goodness, I haven't even thought about Easter dessert yet. Perhaps I'll make a custard pie--one of my husband's favorites, and it does use up a few eggs. It's also light enough to enjoy after all that ham and green beans and scalloped potatoes and tomato aspic and home-made crescent rolls with butter. Toni, shall I set another place or two?
usually, i make either angel food cake or a cheesecake, but this year, my brother is taking us to a buffet. can't say i'm upset.....lol
toni & annette, you're probably the smartest of us all! If I had any sense i'd go to the Turkish bakery around the corner & order some freshly-made Baklava ( it's sooooo insanely good at this bakery!) & save myself a bunch of effort! But we all love to cook & older son is cooking the entree & veggie sides; younger son is making the appetizers & salad, so i'd be wimpy if I didn't bring homemade dessert.
Hey, after reaching a certain age I decided that taking the easy way wasn't wimpy at all. It makes the holiday meal more relaxing for everyone cause like the saying goes...."If momma ain't happy, aint't no body happy" Also, you would be supporting a local family business by buying from the bakery and in this economy it's very important that we all do our part to help others. And, their products are always perfect and wouldn't you feel really bad if for some reason yours didn't come out exactly right? Okay, how many more plausible reasons do you want me to come up with so you can take this holiday off
I will bake a coconut cake. I've been looking through cookbooks for just the perfect recipe :-D Should probably do a lemon pie too, my mother in law loves lemon meringue
toni, I have "reached a certain age" also! Believe me, I take lots of shortcuts these days. In fact, i'm pulling a fast one this Easter. I ALWAYS had all the holiday meals at my house. Well, this Easter I decided I just didn't want to super-clean the house, so when my son & DIL suggested having it at their house this year, I acted a bit uncertain & disappointed.... but....you betcha I agreed! No housework, no all day cook-a-thon & best of all.... no big clean up. Pretty sneaky, huh?
My MIL asked what we were doing for Easter and I said "I don't have any plans, no one mentioned anything so I guess we can plan on having dinner together" She said never mind, but you all know that just won't do. So I'll be making something for dessert. My husband is suggesting mexican. Yippee! I love that stuff, but my FIN would not even try it. I am sure. So I bought a ham. Good thing she is legally blind, I don't have to clean too clean. Just keep everything off the floor. Kevin says this is good, now I can spend more time hugging him instead Maybe we will have nutty bars from little debbie, since I have to make everything else and kind of clean the house after I get done in the greenhouse.
I have a standing invitation to go to my aunt's for any holiday. Her children bring all the food... and LOTS of it. It's pretty chaotic though. There's her kids, grandkids, great grandkids and great-great grand kids! All running around and getting into everything! But, the food is good. Especially the pies and cakes. I do help clean up when I go though. That's only fair.
