English Muffin Toasting Bread

    English Muffin Toasting Bread


    3 cups all purpose flour
    1 TBS.sugar
    1 1/2 tsp. salt
    1/4 tsp. baking soda
    1 TBS. yeast
    Blend together

    Mix
    1 cup milk
    1/4 cup water
    2 TBS. veg oil or olive oil
    Heat to 120- 130* or hotter then lukewarm but not uncomfortable.
    Pour the liquid over the dry ingredients.
    Beat at high speed for 1 minute.
    Lightly grease bread pan and sprinkle with cornmeal.
    Scoop the dough into pan, leveling as much as possible.
    Cover and let rise to 1/4 inch above pan. 45-60 minutes.
    Preheat oven to 400*
    Bake 22-27 minutes or 190* interior

    I have that same recipe, except mine calls for a bit more of everything since it makes two loaves. It is super simple and delicious.

    If anyone weighs their measurements the flour is 12 3/4 oz. It's how I bake. The loaf you saw this morning is gone.
