Four day pecan pie

    It takes four days to make a pecan pie at our house.
    Please remember we are in a historic drought, and the pecan trees aren't bearing well, if at all.
    Step 1: Go to church Christmas gift exchange and receive a pound of pecan halves from a local pecan grove owner sho has performed a miracle and has pecans. Thank him profusely and return home, clutching the equivalent of a pound of gold.
    Step 2: Wait for the young hens to lay enough eggs for the pie filling--six eggs needed, six young hens, this takes at least two days, maybe three.
    Step 3: assemble ingredients and make pie, fill pie crust and bake.
    Livin' in Texas sometimes ain't easy, but it's always interesting!

    Does it matter if the eggs are green, white, brown or blue? There were no pecans at the local church fair though we picked up a mince pie and lots of scones. You were lucky to make it home with your pecans without meeting up with highway robbers. Our pecans will have to come from the grocery store. We don't have any pecan trees. And the store eggs will be a month old. :-(

    You want my Mom's Pecan Pie recipe, it only takes 3 eggs, it could cut the wait down to only 1 or 2 days.

    Pecans, where they have a crop in south Texas, are being stolen by the ton - literally- because drought has made them scarce and expensive. When the grower is away from the field, they move in the shaking machine and strip trees bare in just a few minutes.

    I don't mean to brag...
    but we have plenty of pecans from our few trees. The one that's producing the best is the one in my part of the yard since it got water from when I was watering the flowers.
    From the stash that Hubby has already shelled, I've made 2 pies and last night I made a batch of pecan pralines. There's still enough for at least 2 more pies. And there's a bucket full waiting to be shelled... and lots more still on the ground.
    So far, no one has come over to steal them... except the squirrels. And oh yeah... the dog. She cracks them open and meticulously get the meat out!

    Anyhow... sure glad you got some pecans and hope the hens lay lots of extra eggs just for the pies!

    In past guy sold pecans at church. They was $17 a bag. They sold them for $$$ for Park remodeling. But he just had hip replacement. I never made home-made pie with them.

    It finally stopped raining sometime last night. This morning it is cold and the wind is out of the north. The bridge didn't was out, but the water was right up to it. The good news is that it's supposed to be sunney for the next 7 days.

    Jerry, the recipe doesn't specify egg color, so I use any egg the ladies lay.
    Cheryl, yes, you are bragging, and with good reason. If Toni is right about the pecan snatchers, you better keep an eye on your pecans.
    Toni, thanks for the offer, but the recipe I use is my sister-in-laws', and if she found I made a pecan pie using another recipe, she'd scalp me!
    Koszta, at $17 a bag for pecans, I may go steal a few myself.

    I paid 8.00 for a pound of pecans a few weeks ago. I can't believe I did it, but they are essential for some of my cookie recipes...substitutions just won't do.
