Has anyone out there had a possitive experience with freezing asparagus and if so what is your proccess?
Just so ya know I have never frozen Asparagus but was really hoping someone with experience would have responded by now. Having said that I found this online an plan to give it a try as soon as I have enough of it an we're tired of eating it. What is the best method for freezing asparagus? Wash and sort small, medium, and large stalks of asparagus. Leave whole or cut in 1- or 2-inch lengths. Blanch small stalks 2 minutes, medium stalks 3 minutes, or large stalks (1/2- to 3/4-inch diameter) 4 minutes. Chill in ice water for the same time. Pack tightly in freezer bags or rigid containers. Sorry I missed this post. We used to freeze several pounds each year. The method above would work well. I never sorted spears, just blanched, cooled with water to stop the cooking process and bagged. I did find that it was more difficult to do longer spears. They never cooked up as well as the cut after freezing. Just don't blanch any longer than they suggest or you will wind up with mush when you get it out of the freezer. The flavor is very good for a forzen veggie.
