I've made this one, and we both liked it. :-D ONION SOUP 2 tablespoons (1/4 stick) butter 2 pounds onions, sliced thin 3 cans (14½ ounce each) beef broth ½ cup dry red wine 1 1/3 cups seasoned croutons 4 thin slices Swiss cheese 4 Tbsps grated Parmesan cheese Melt butter in heavy large pot over medium-high heat. Add onions; cook until deep brown, stirring frequently (20-25 minutes). Add broth and wine - boil until soup is slightly reduced and flavors blend (10-15 minutes). Season with salt and pepper. Meanwhile, preheat oven to 500°F. Put 4 deep ovenproof bowls on baking sheet. Add 1/3 cup croutons to each bowl. Ladle soup over croutons and top with cheeses. Bake soup until heated through and cheeses melt, (8-10 minutes). Serves 4
This is exactly the recipe I need. Hubby Finally eats onions. I don't know how this great change came about but I'm going with it. 8)
