3/4 cup butter or margarine, softened 1/2 cup sugar 1/2 cup packed brown sugar 2 eggs 1 teaspoon vanilla 1 and 3/4 cup all purpose flour 1 and 1/2 teaspoon baking powder 2 cups shredded zucchine 1 cup flaked coconut 3/4 cup chopped walnuts Frosting: 2 cups confectioner's sugar 1 teaspoon ground cinnamon 2 tablespoons butter or margarine, softened 1 teaspoon vanilla 2 to 3 tablespoons milk In a mixing bowl, cream butter or margarine with sugars. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour and baking powder; gradually add to the creamed mixture. Stir in zucchini, coconut and nuts. Spread into a greased 15x10x1 inch baking pan. Bake at 350 degs. for 25 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. In a bowl combine confectioners sugar and cinnamon. Stir in butter, vannilla and enough milk until frosting reaches spreading consistency. Frost cooled bars. Cut. Yield: about 5 dozen I mixed a small amount of confectioners sugar and cinnamon and sprinkled it over the bars instead of frosting them. It gives taste without the large amount of sugar. Dooley

Thanks! They are really good and they are a way to use all that zucchini I grew this year. I had grated some and covered it with brown sugar to make marmalade and then decided not to make marmalade so froze it in two cup portions so it's already to go. I cut the amount of brown sugar that I used to compensate for what I had already put on the zucchine before I froze it. Sometimes it seems like I never use a recipe just as it is anymore. Dooley
