Fruit and nut refrigerator cookies

    3/4 cup butter or margarine
    1/2 cup granulated sugar
    1/2 half cup firmly packed brown sugar
    2 eggs
    2 and 3/4 cups all purpose flour
    1 teaspoon baking powder
    1/4 teaspoon baking soda
    1/4 teaspoon salt
    1/2 teaspoon ground cinnamon
    1 cup candied fruit mix (I used a fruitcake mix from the vegetable section of the grocery store)
    1 cup chopped pecans

    Cream butter or margarine in a large mixing bowl; gradually add sugar, beating until light and fluffy. Add eggs and beat well
    Combine flour, baking powder, soda, salt and cinnamon in a medium mixine bowl. Add to creamed mixture, stirring well. Stir in fruit mix and pecans.
    Shape dough into 2 rolls 1 and 1/2 inches in diameter. wrap in waxed paper and chill several hours or overnight. Remove waxed paper; cut into 1/2 inch slices. Place 1 inch apart on greased cookie sheets. Bake at 375 degs for 8 to 10 minutes or until lightly browned. Remove to racks to cool

    Yield 8 dozen.

    I'm not sure how many I got. I didn't count them. I didn't measure to be sure I cut 1/4 inch. I eyeballed it. I'm not sure how good my eyeballing is when it comes to making cookies. They are good anyway. Dooley

    With just a little tweaking of this recipe I can make them for my fruitarian son for Christmas. Thanks Dooley. Please post more if you have them. :-D

    Bet you could substitute that really thick applesauce for the butter, mmmmm

    I think you could maybe. I haven't tried it but there are substitutes like that in my diabetic cookbooks. Dooley
