Green Tomato Salsa

    Green Tomato Salsa - Makes 8 pints
    Cooking time includes canning process.

    Ingredients
    Chop ( I use food processor)
    5 lbs. green tomatoes
    6 yellow onions (4 cups)
    3 Jalapenos ( I use at least 60
    4 large red bell peppers ( green will do)
    6 garlic cloves
    1 cup cilantro ( replace with parsley, tarragon, dill or all 3)
    1 cup lime juice
    1/2 cup vinegar
    1 Tablespoon salt
    1/2 Tablespoon cumin
    1 Tablespoon dried oregano
    2 teaspoons pepper
    1/4 teaspoon cayenne ( optional)
    1-2 teaspoons sugar

    1.Place all in large pot, mixing well. Bring to a boil, reduce heat and simmer for 30-40 minutes, stirring occasionally.

    2. To can, bring salsa back to a boil.

    3.Ladle salsa into jars, leaving 1/2 inch headspace.

    4.Process jars for 15 minutes.

    Donna S, Thank you so very much. As you know I will check it out within a week. I have plenty of greenies around these days. :D :D

    I think I am going to put it into Half pints. That's a good size for us.

    Jewell - It is yummy. I baked salmon last night with this salsa spread over it. The only problem I had was I didn't cook enough.

    Barb - Once you open a jar it won't last long.

    I have to adjust my water bath time to 20 minutes as I am at 1001 feet above sea level.(Should have put my kitchen on the lower side of the house and I would have been ok.) :D

    Hope everyone realizes they must consider that when canning. Always better to be safe than sorry when it comes to preserving foods.

    Donna S, Is this how yours looked? I did it exactly as you did. My red stuff has more liquid in it. Maybe I didn't cook them long enough. What do you think?

    I just had to make it today. I couldn't wait till next week.

    I haven't tasted it yet. I forgot to before I canned it. :rolleyes: I, of course, got 8 pints.
