Green Tomato Salsa

    I cleaned out my greenhouse this week and ended up with almost a bushel of mostly green tomatoes so I went to work looking for canning recipes for ..what else? green tomatoes. I found a green tomato salsa.

    Green Tomato Salsa

    5 lbs green tomatoes chopped, diced or pureed (how ever you like your salsa texture)
    6 onions ..chopped or diced to suit. (4 cups)
    3 jalapenos diced with seeds (1/2 cup)
    4 large red bell peppers ( green will work or a combination)
    6 cloves of garlic crushed
    1 cup fresh cilantro
    1 cup lime juice (lemon will work, too)
    1/2 vinegar
    1 tablespoon of salt or to taste
    1/2 tablespoon cumin or to taste

    1-2 teaspoons of sugar or to taste. (mine was too tart, I added a little more)

    combine in a large pot (8 quart) mix well, bring to a boil, reduce heat and simmer for 40 min.

    Ladle into clean jars leaving 1/2 inch head room

    add lids and bands to finger tip tight.

    Place in pan with simmering water, bring to a boil and process for 15 minutes.

    Check lids and refrigerate any that didn't seal after 24 hours.

    Approximately 8 pints.

    That looks good. I have many salsa recipes and have saved yours now. Thank you. I will make yours next Fall.

    Barb, If I could give you some tomatoes today you could make it this fall. It doesn't even look like I used any.

    So carolyn keiper, will you use all the tomatoes for salsa and sell them next year???

    Barb, I can't sell it at my markets, but I can offer it for sale here at home on my stand (different rules for different points of sale, which makes no sense to me.), so maybe I will sell it or maybe I will keep it all for us, but I will probably sell some of it.

    Well, it sure looks good. Keep on using those tomatoes. Please tell us how many jars you got out of them. It's a good lesson on using what others let go to waste.

    I saved every little piece of food that I could out of my garden this year. Except the tomato skins....That I will get into next Summer.

    2nd Batch tonight... I made 19 pints with all the ingredients I had on hand., As I was getting ready to start I was thinking "what could I use to make this go a little faster and have uniform pieces of tomatoes...hmmm"..... I saw my apple slicer sitting next to the sink and thought I would try that. Well, it worked beautifully.

    Now, if I had worn gloves to clean the 15 jalapenos, my hands wouldn't be radiating the tingle of capsasin.

    Looks very good. I love to see photos of progress. It is great.

    The salsa is looking good. The apple slicer worked very well, didn't it. Just to see them like that--it makes such a fancy presentation.
    Clever that you thought of that.
