( photo / image / picture from mart's Garden ) Need recipes please. Anything I don`t have is welcome.
WOW!!! I am impressed. I am guessing you mean recipes for cooked tomatoes. The one I have is for fresh. Have you every had them sliced with a slice of fresh mozzarella cheese, a leaf of fresh basil, & good quality olive oil drizzled over it all? It is to die for! Good luck collecting recipes. What a harvest!
I have a recipe for you. 1 sturdy box 1 reliable vehicle 1 nearby post office a whole bunch of stamps... and my address! Those look delicious! The stink bugs wiped out what few tomatoes Hubby had.
Good them with a small amount of water, mash them through a colander and freeze the sauce for soup and stuff this winter. If it's too watery you can cook it down a bit but I just use it as it comes out of the colander. The colander gets rid of the peel and most of the seeds. dooley
Cherylad, can you put my address in too!!! I'm so jealous and I'm still struggling to get a decent size tomatoes!!!
I cut mine up and put in gallon freezer bag and freeze great for soups, stews and sauces we like having the peel on them so it's not a problem they freeze very well
Put 'em up! Blanch, slip the peel, stuff in canning jars leaving 1/2-to-1 inch of head space, then 'hot-water-bath' to seal.. Pressure canner not required for tomatoes.. Hank
Address forth coming. I'm green with envy and my mouth is watering Looks like you need to get out the canning jars. We love them barely cooked up fresh. I slice them thick, and sprinkle them with spices, cheese and bread crumbs and bake until cheese is melted. Taco type seasonings (cumin, chili and garlic/onion powder) with cheddar cheese or Italian type seasonings (oregano, thyme, garlic/onion powder) with monzerella cheese. Yummm
Marinara sauce (I freeze lots of this for winter use) 2 lbs. tomatoes, peeled and seeded (I just squeeze out as much seed/pulp as I can and don't worry about the rest)and roughly chopped 1 small onion, diced fine 1 clove garlic, minced 2 tblsps. olive oil 2 tblsps. tomato paste (adjust this to more if your tomatoes are particularly acidic or less if tomatoes are sweet) 1 tblsp. fresh basil, chopped salt and pepper to taste In a large skillet heat the olive oil and sauté the onions and garlic until the onions are transparent. Add the chopped tomatoes and tomato paste. Simmer for about 40 minutes or until the sauce thickens. Add the basil, salt and pepper. To use, thaw and heat, then add to cooked pasta.
They sure would look pretty in my canning jars. Have you tried dehydrating tomatoes? I'm going to try it this year.
Remember the spray I told you about ? Just an extra squirt of dog or cat shampoo and takes care of those stink bugs too.
Thanks everyone,, Just needed new ideas. So far I have canned plain tomatoes, two batches of picante, marinara sauce, spicy ketchup, tomato juice and frozen enough for half the town. That pic was only half, had another batch on the other side of the tree.
Mart... I told hubby to use "your" spray on his tomatoes. He didn't. I told him to use my Neem oil mix. He didn't.
Mart, Such a beautiful crop. if I lived anywhere near Texas, you wouldn't have one extra tomato. We have beautiful tomatoes, but they remain green. Not a speck of red. That's okay. I can wait.
