hummus dip

    my sisters in law & i have been making this for a few years now...i actually found it on the side of a ritz cracker box......we call it the all you want to eat without gaining weight dip........

    spread a thin layer of hummus (a small container) on a plate....top with one finely chopped cucumber (seeds removed), a bit (maybe 1/4) of finely chopped red onion, a couple of finely chopped plum tomatoes (seeds removed) and top with crumbled feta cheese. serve with wheat crackers.

    the secret, i think, is to make sure you take the seeds out of the cukes & tomatoes...that way it doesn't get too soggy.
