Having been in Texas for a bit more than a year I decided it was time to try to make Gumbo. We had a good chicken and sausage gumbo at a Christmas party we attended so I thought I would start with it. I cooked the chicken early and let it cool. dr deboned it and cut it up. With spoon in hand I started stirring and stirring and stirring and stirring until the roux was nicely browned. I had cut up the vegetables before I started the roux so dr stirred them while I was stirring the roux. I put the chicken broth and some diced tomatoes into the roux and stirred some more. When they were hot, dr spooned the vegetables into the pot while I stirred. We added garlic, onions, celery, peppers, and okra. We added chicken and sausage and let it simmer while we made rice and corn bread. dr gave it his stamp of approval. It's a good thing because I would have blamed his vegetables if he had not liked it. It made a large pot of gumbo so I shall put some in the freezer and have some for supper on Friday so I won't have to cook much after going down to the doctor again. dooley
It is good for two people to do the cooking. He could have also blamed it on your roux but you are both good cooks so I am glad it turned out for you. wannabe

That gumbo sounds excellent! I'll have to give it a try here as well. I do so love soups and gumbos around this time of year Hope all goes well at the dr's.
