I need my Pheffernusse fix!

    In years past, during the Christmas holidays, I developed a taste for Pheffernusse cookies. I have always been able to get them from the local grocery store, in a special holiday display. It seems that the Archway cookie company that provided the cookies at Christmas, has gone out of business. This is the second season that I have looked in vane, for my favorite Christmas cookie, the Pheffernusse. While I'm not among those that claim talents at cooking, I may be willing to try, if I can find a good recipe. Or better, if someone can point out a place to get them. I need my Pheffernusse fix!!!

    Oh, Calomaar, I'm so sorry for you. We don't make pepper nuts in our household, we buy them from the shops, but if I'm not totally mistaken some Stewbie usually makes them. I can't remember who, though.

    We still have Archway cookies here Tom.I have never seen the cookies your talking about.Just sugar. chocolate chip and Oatmeal,I forget what others but we still have that brand.

    I just read about Archway closing down. Glenda if they make any you really like you had better stock up on them while you can. They filled orders they had but production is closed down.

    Tom if you can't find a new source for your cookies maybe this will do instead:

    Pheffernusse cookies receipe.

    Cook Time: 13 minutes.

    Ingredients:
    2 cups sifted flour
    3/4 teaspoon ground cardamom
    3/4 teaspoon double-acting baking powder
    3/4 teaspoon ground allspice
    3/4 teaspoon salt
    3/4 teaspoon mace
    3/4 teaspoon baking soda
    1/2 teaspoon finely ground white pepper
    1/4 teaspoon ground anise seeds
    1 cup honey
    3 Tablespoons shortening
    1 egg
    Confectioner's sugar

    Preparation:
    Preheat oven to 350 degrees F.

    Sift together flour, cardamom, baking powder, allspice, salt, mace, baking, soda, pepper, and anise.

    Heat the honey but do not boil. Add the shortening, then cool. Beat in the egg, then stir in dry ingredients just until blended. Let the dough rest for about 10 minutes to allow it to stiffen.

    Shape dough into 1-1/2-inch balls. Place the balls onto a greased cookie sheet (you may flatten them slightly if you wish). Bake for 12 to 13 minutes.

    Cool the cookies well. Place the cookies in an airtight bowl, cover tightly, and allow to ripen for about 2 weeks. Dust with confectioner's sugar before serving.

    Yield: 3 dozen

    Eileen's recipe sounds really good, but if you want to go googling them try entering "peppernuts", it's another name for them and there are several variations on the spelling of pheffernusse. Type in pfeffernuesse and you will get quite a few recipes. Or if, like me, you like a good ol' fashioned cookbook, try page 833 of the Joy of Cooking :)
    I can't believe Archway is going under, I love some of their cookies. that's a sad commentary on the economy when a cookie company can't make it...
