It's a Disaster!!!

    For the last 2 day I had been patiently preparing croissant dough to make one of my most favourite pastry. As the hour pass I can imagine sinking my teeth into those always delicious croissants with sunny side up eggs and bacon.

    This morning the dough is ready for shaping and baking. Today is the day of truth ...

    That is the only croissant, it was a disaster, I'm so sad!!!

    Luckily Becky had a back up plan and made my mess into cream cheese Danish.

    They are all Danish of different size and shapes except for a single very lonely croissant.

    What a shame, KK. I like croissants too. In fact I often get on the bike and ride down to the corner bakery for some fresh, warm ones in the morning for brekkie.

    Hang in there mate...you'll get it next time. Lucky that you have a chef in the family.

    Poor KK. You can always hit the McDonalds down the street though not as good as yours could have been, it's quick. :D :D

    KK, I made them once too. that was it. That was a lot of work for the results. Don't feel too bad that it wasn't what you expected. Try again.

    KK--I admire your efforts. Too bad they did not turn out well. Do you know what went wrong?

    Hubbie & I will be celebrating our 32nd anniversary this September. We plan on going to Quebec (French Canada) for a long weekend. Do you know what I am most looking forward to in Quebec? You guessed it, the croissants!!!

    I looked at your croissant and I immediately saw a bear's head and it's smiling!! Disasters are there to make us try again to perfect what we want to achieve. I'm sure your next batch of dough will work out well for you. Becky's cream cheese Danishes look mouth watering so not all was lost.

    Each batch of croissants brings you closer to a workable technique. Lets hope your trial batches are few and a rewarding batch is close. Good luck with future batches.

    Thank you all and I am now much fatter after eating all the mistakes to get rid of the embarrassment :D :D :D

    I have a feeling that the temperature is just too warm ... I mean the weather temperature. The butter just oozes out from everywhere. Next time I'll put it in the fridge longer and more often.

    Maybe I should try to get into the fridge to do it ...haha!!!

    Sjoerd, yes luckily we were prepared to turn them into very heavy Danish :-D , the layers collapsed too!

    Barb, McDonalds here don't have croissant and the bakeries here do not use butter for their croissant. :(

    Cayuga Morning, I am so envious of you, congratulation on you anniversary and eat lots of croissants ... send me one :oops:

    KK, Try freezing the butter, that will keep it cold longer and yes, keep the croissants in the fridge. You should also chill the baking pan and anything else you are using. I also chill the heavy pottery bowl I use for things like that. Metal or plastic bowls warm up too quickly.

    Koszta Kid thanks, I would like to meet your Father if I can :)

    Mart I did it early in the morning the coolest part of the day about 29°~30°C and the dough was in the fridge for 24hours. The butter was flattened and put in the fridge for 24hours too. I very quickly wrapped the frozen butter and did a very fast vast roll out, fold it and put it back in the fridge for 30 minutes before starting on the second roll and fold, likewise for the third time. I think my mistake was that I was over concern about the resting of the dough and forget about how long it needed for the butter to re-hardened.
    Chill all the working is a good idea Mart, thanks for the tip, I will do that on my next attempt. Also I am thinking of rolling out half way and put it back fridge for the butter to re-harden, also instead of 30 minutes I 'll make sure that the butter is harden before I continue. Wow! I'm back to full confidence but have to wait awhile before I start again because the last batch is still in the fridge!

    Well, no matter what problems you had, they sure look delicious!

    Kudos to you for trying! I LOVE to cook, but I've never been courageous enough to try croissants! :D

    Thanks Ronni, we had the last 2 Danish for breakfast this morning and I am itching to give it another go tomorrow morning :)

    Oh they all sound to yummy even the one that didn't turn out so good. When is comes to baking I make a mean chocolate chip cookie and a yummy apple crisp. But I have a black thumb when is comes to baking anything else. Oh well. I just buy those other yummy's and enjoy the fruit of others labors.
