We planted dill in our vegetable garden for the swallowtail butterflies and to have a bit for cooking. It took over. I spent a good part of last spring pulling dill up by the roots. Guess what? We have fresh dill plants coming up in the garden! I didn't let our dill go to seed, pulled as much as I could, and now we have as much dill as ever. Anyone else overly blessed with dill?
I WISH! I barely had enough dill to make my pickles in the summer when I was TRYING to grow dill! Lucky you!
My mom grows dill in her garden. It seems pretty easy, but still can't decide to start grwoing it myself.

I haven't tried Dill....guess I should since I do use more of it in the kitchen than anything else. I have grown Fennel for the Swallowtail butterflies for several years....we don't eat it but they sure do.
Toni, we grow fennel also, both the bronze and the green types. We don't use it--just let the butterflies' caterpillars have their way with it! If I need an "anise" flavor for something, I just use the Mexican Mint Marigold leaves. Tastes just like French tarragon, but can stand our humid summers. I pulled some dill today to add to roasted potatoes for dinner tonight. I fear I'll be fighting dill all summer again.
I have never tried using the Mexican Mint Marigold in cooking but have grown it for years too. I have a photo of one Fennel plant out back a couple of years ago with more than 12 caterpillars in different instars munch their way long the stems. My Fennel overwintered beautifully so it will be ready for any early butterflies, i have 3 out front and 2 our back.
