Let's talk turkey--or not

    We are not having turkey for Thanksgiving. Since there are two of us, we figure two people and a turkey is equal to eternity. We are having pork tenderloin in claret sauce with appropriate side dishes.
    What are you having, turkey, or not?
    (International members please feel free to chime in with traditional vs. non-traditional dishes for your national holidays, please.)

    We always have a turkey, BUT I never eat it. I don't really like turkey. The only part I like is the stuffing from inside the bird. Potatoes of any kind are always welcome, but I still like mashed with gravy, for a side.

    We haven't had turkey in years... unless we go to my brother's house for dinner. Usually we'll have BBQ or Gumbo.
    But this year... I'm hungry for lots of turkey... so we'll be either smoking one or frying it.

    Sooooo, I have heard many times of people smoking a turkey but I have never known which end you light. :headscratch:

    It will be turkey at the nieces house with a dozen relatives.

    Has anyone ever tried a churducken?

    Jerry... I've had turducken at my brothers. It was okay.
    Just don't see the big deal.. except for the novelty of it.

    At my house its going to be southern style chicken and dressing,with giblet gravy, english pea salad, braised green beans with mushrooms and onions, fruit salad, pumpkin pie and hot rolls !!

    Yes, Yes, Yes.... I have it at least 3 times a year. Yum. I just had it a few weeks ago just to get rid of last years. I cook it and strip it and serve it for that night and then I freeze all the dark meat in small packages or pint jars and all the white meat in small packages or in pint jars and then I boil the remains in water and strain it and freeze or can it in pints or 2 cups zip lock packages. Think I got about 50 cups or so last year of broth. I use it for everything that calls for water, like beans, or rice or the like.

    All I did was dropped the legs. This was such a good turkey we couldn't believe it. That was a couple of weeks ago.

    I am ready for another one now.
