    2 tablespoons vegetable oil
4 medium onions, cut into wedges
2 red bell peppers, cut into 1/2-inch strips
1 pound beef liver, cut into 3/4-inch strips
    1/4 cup soy sauce
    1/4 cup honey
    1/2 teaspoon salt
    1/2 teaspoon black pepper
    1. In a large skillet, heat the oil over medium-high heat. Add the onions and bell peppers and sauté for 8 minutes, or until tender.

    2. Add the remaining ingredients, cook for 7 to 8 minutes, or until heated through and liver is cooked to desired doneness.
    Makes 4-5 servings

I'll have to leave out the peppers as my stomoch doesn't like them but I'll be giving it a go too. :-D Thanks for posting the recipe for us Al. I would never have thought of adding honey.
