We live in the back of nowhere, and fish (other than catfish) is fairly scarce, but I talked our local grocery manager into getting some frozen Mahi Mahi. Mahi Mahi is a mild fish with a firm texture, and we fell in love with it when dining at restaurants in the Caribbean. Frozen isn't as good as fresh, but until we install a salt-water pond and stock it with Mahi Mahi, we'll just have to make do. For my husband's birthday yesterday I fixed marinated Mahi Mahi fillets. He ate his up with a smile on his face, so it must have been pretty good! Marinated Mahi Mahi For each filet: 2 tsps. lemon juice 1 tsp. grated lemon zest 1/2 tblsp. olive oil 1/4 c. dry white wine 2 tblsps. unsalted cold butter grating of black pepper dusting of fine sea salt In a heavy skillet, heat the olive oil on medium heat. When the oil starts to shimmer, pat the filet dry and sauté it until golden on bottom (3-4 minutes). Flip the fillet over, add the garlic, wine, lemon juice and zest. Cook until the filets are done and then transfer to a platter. Add the cold butter (cold butter acts as a thickening agent--room temperature it just adds to the liquidity of the sauce)to the liquids in the pan and scrape up the brown bits. Cook until the sauce thickens. Dust the filets with the salt and pepper, drizzle the sauce over, and serve with a side of rice, or roasted vegetables, or a cold vegetable salad. This can be done for a small dinner party (I wouldn't suggest more than six people). The dish doesn't hold well, so plan on serving appetizers, then seating everyone and presenting the fish (you are in the kitchen cooking while they are enjoying the appetizers) and side dishes. The applause and "yummy sounds" you receive make up for missing out on the appetizers!
Yummy! My brothers have been catching Mahi Mahi on their sailing trip and cooking them right then an there. Can't get no fresher than that!
YUMMY! I love Mahi Mahi. I will order it at our local tavern when we go out for a fish fry on Friday night. They grill it and it sooooooo yummy. Opps I think I already said how yummy it is. I will definitely try this out.
