Making a "ristra"

    Any hot peppers may be used in "stringing" a ristra for hanging/drying, but here's a little helpful hint to aid in SUCCESS of drying peppers without spoilage.
    (WEAR RUBBER GLOVES FOR THIS PROCEDURE!)BEFORE running a needle..or wire..thru necks of peppers, use the needle to fully puncture pepper skins up/down and around each one. This allows internal gases to escape during the drying process, eliminates interior rot that can occur and spoil various types of hot peppers. The holes will never show, peppers dry beautifully as an end result: this is extremely helpful in areas with high humidity! So, string away and enjoy the colorful ristras..

    That is a great tip. Thanks. I'm passing it on to my friend in Albuquerque NM who grows chillis and dries them to use throughout the year.
