My Eggs

    I got my green eggs. They are just starting to lay. I am so excited about this. I hatched the parents last Winter in my kitchen and let them outside in the Spring. Now they are getting big enough to lay. I think they will get bigger but this is enough to get me excited for right now.

    It's going to be green eggs for Christmas this year GUYS!!!!!!!

    Barb, are your green-egg layers Americaunas? This is exciting--having hens that you knew from the egg producing for you. The eggs will get bigger as the hens mature, too.

    Oh Yes, they are Americaunas. I bought the eggs as not half breeds. My friend keeps her breeds separate like I do.

    My brown eggs in the picture will get bigger for everyone in those 2 pens are young.

    We put an electric fence around all our chickens and ducks and pheasants since the bear came through. The neighbor said he was out there a few nights since we did that.

    Anyway, so when they get big we will sell large brown and green eggs. I can't wait.

    Barb, What breed are the brown egg layers? I have golden buffs and I notice that the eggs DO NOT PEEL after you boil them NO MATTER WHAT you do to them. The americaunas peel just fine.

    No, Hubby just came home and told me they're Araucana. We got another small green egg. I am happy.....

    The brown egg is a Jersey Giant. The get to 13 ish pounds. So they will get big eggs when they are mature.

    I've never seen green eggs before Barb. Neither wonder you're excited to see your hens laying them. Let's hope the fence keeps that marauding bear away from your girls.

    Carolyn, as you most likely know, fresh eggs just don't peel when hard-boiled. If I'm needing hard-boiled eggs, I use the ones that are at least a week old.
    Try storing a few eggs in the fridge for a week or more, and see if they peel better when hard-boiled.

    Green eggs? Green chickens? Hmmmmm....Brown eggs, brown chickens. then the white eggs come from white chickens. Are there any blue chickens? :) O.K. I did not know you can't peel a hard boiled new egg. I'll bet the green eggs never make it off the farm, I wonder what happens to the blue eggs?

    Oh Girls..That's a whole nother subject.

    I have boiled warm eggs right out of the chicken and I have boiled 5 weeks old eggs and none of them peel nicely. I have put vinegar. baking soda, baking powder, cream of tarter in the water. I have started with warm water and cold water. I have poked a hole in the end and they all were hard do peel.

    I have called the clearing house in my area and made him tell me how old he thought our grocery stores eggs were and he told me they were over 4 weeks old getting to the store. I have bought eggs from the store, which were probably more than 4 weeks old, and hold them in the fridge for 2 or 3 weeks and they peel wonderfully once boiled.

    When my daughter was little and I knew nothing, all my eggs peeled wonderfully for Easter. They were just 7 weeks old and it worked fine.

    How I boil eggs is how my mom taught me. Cold water cold egg, warm water to boil. As soon as it boils take the pot off the burner and let the eggs sit in the water for 10 minutes and then run cold water over them for a long time to stop the cooking action. They are a beautiful hard boiled egg without having green around the edge of the yolk. If it peels nicely. :D :D

    Jerry, Our green eggs come from red chickens. There are blue eggs. They come from Americunas. Do you know they make square watermelons. ;)

    A recipe for boiling eggs. I will have to print this one for the cook book. Oh!! Eggs in the store are 4 weeks old??? Yuck!! B-b-b-but the package says fresh. :eek:

    I have seen the square watermelons they grow in Japan, they fit well in a refrigerator but at $82 a melon they are a bit pricey.

    I have tried it all ways also. I really think that it is the golden buff eggs. I even called my friend who has golden buffs (200 of them), and asked her the same thing. She said hers don't peel well, either, she sets them aside for at least two weeks to use them as hard boiled eggs. My sister said the same thing a few months ago and I didn't think anything of it. The Americauna eggs peeled just fine and the golden buff eggs are sooooo frustrating with all the waste of the white. I actually fed them back to the hens when I made them the other day. :scheming:

    Oh yes, Jerry, the chickens know--they just don't care. Chickens are famous for having no sense of social responsibility, and very little moral rectitude.
    If you want to get checkerboard eggs, get a Dominicker--lovely black and white speckled hens.

    Green eggs...who knew? Dr Suess did I guess! Knowing now that store bought eggs are over a month old is making me want to find some local FRESH eggs!
