My oldest daughter makes the best turkey pot pies with leftovers.

Store bought pie crusts, chopped up turkey, a bag of frozen mixed vegies (cook before putting them in the pie) a can of cream of chicken soup and a can of cream of potato soup with just enough milk added to make it less clumped up.

Mix turkey, vegies and soups together. Pour into one pie shell and use the other for the top crust.
Bake at 375 degrees until the crust is nice and brown.

The uncooked pies can be frozen for future meals.

A turkey stir fry is always a good way to use up the old turkey breast, it can be quiet dry though so what I do is, to tare the breast into shreds and then marinate it in soy sauce, garlic and oyster sauce. It's always worked really well for me.
