We have been bragging about Peg's naner nut bread for years now and this year we gave away over 20 small loaves of it for Christmas presents. The loaves look loverly Where are you finding rice flour? Is that a common item in your grocery stores? (Not sure I've ever seen it here although I can get tapioca flour in 1 pound bags)
here it is fond in most any large grocery store in several ways including white or brown rice styles of course Louisiana is rice country.
Wow @cajuncappy that is an interesting tidbit that it is found that easily and I don't think I ever realized that Louisiana grew that much rice. We're not (growing rice that is). We have a large Asian + Indian population here and we have lots of varieties of rice brought in but I'm positive no rice flour. I don't think I've ever seen it here and I'm buying flour often as I bake my own bread. Will have a more specific look-see next time I'm at the store. One more question please Is rice flour a lighter flour or is it substantially different from wheat flour? Does it give a much different taste (than wheat flour)?
very little difference most folks dont know the bread is gluten free and really like it we make it that way cause we cant use regular flour and surely dont miss it in this recipe
