pepper problem

    I got these jalapeno pepper plants and it seems as if they have turned red before they were big enough to pick so I have picked both red and green off the same plant. The problem is that the largest one is about 2 inches and trying both they don't seem that hot. Also not sure how to describe the taste but it is almost garden like it is not mature real out doors kinnda taste. Is this normal or did I screw up my peppers this year. Oh I did grow them in pots and they have seemed to dry out more than anything else I had if that helps

    8 inches wide and 6 inches deep. I had 4 of them and it seems that I just don't have enough time to keep them watered like they need here in the HOT Florida sun. It has been in the 90's for almost two weeks now.
